We can safely say there is a lot going on with this bar and we love it! It’s super fun and exciting, I mean there has to be a reason as to why it is a personal favorite of the Fabric’s chocolatier. First of all, we have cocoa beans from Ecuador which are characterized by a smoky fruitiness with an uplifting acidity that could be compared to plums, raisins, and blackberries supported by a background consisting of soft floral-honey aspect, herbaceous malt and sugar cane touch, and nutty sweetness. We are getting a strong dose of cocoa in this chocolate that in our opinion has been paired very cleverly with an exotic candied kumquat that goes perfectly with the deep and joyful fruitiness of the cocoa beans. In addition, we have coffee beans from Rwanda which truly makes our head spin in excitement. Did we already say we are excited? Coffee from Rwanda has that signature citrusy floral taste profile for African coffees but it has a fuller body due to its smoky nature which compliments Ecuadorian cocoa beans. It adds complexity to the texture as well as aroma which we can never get enough of.
