Thanks to the use of different cocoa beans, from different regions and treated differently but always with respect, each chocolate bar apports some new quality. Instead of merging all into one category, they stand strong individually and that’s what we love about good quality chocolate. This Peruvian chocolate definitely has a personality of its own and it is a strong one. It contains 70% cocoa which coming from Peru has more of a smoky, earthy, and woody tone to it. However, we aren’t left without some brightness as there is an underlying dimension of sourness coming from a floral and wine-like quality of the finish. This chocolate has a bold and confident character that makes it irresistible in our opinion and has us wanting to come back to it again and again.
