At 70% cocoa, this handmade chocolate made with Fino de Aroma cocoa beans from Arauca plantations reflects in its taste not only the cocoa variety but also the richness of the soil and the culture of cultivating cocoa in Colombia. The rich and diverse microclimate of the country allows for the growth of cocoa varied in taste and aroma. The flavor profile can range from earthy spiciness through the caramel-like vanillic sweetness to light and fruity floral. Nonetheless, we always find that Colombian cocoa carries all of these qualities together in a beautiful balance with some of the characteristics coming forward more. Owing to the sweetness to cane sugar this chocolate has a characteristically excellent taste and distinctive aroma that are unmistakable.
